Chef Renu crafts the mole from scratch with a base of chocolate, nuts, chilies, and various spices. Queso fresco and sesame seeds serve as the final flourish for the chicken mole. Other tasty options include cilantro-embellished salmon, spicy sofrito jambalaya, and Jalisco-style lamb birria.
